I wouldn't use the regular photo editing too much. I have used the camera to take posed pictures of the students. I then print, cut and add the pictures to work they have completed. I also used photo booth to stretch their faces and added them to q-tip skeletons. This turned out awesome. We read the book Dem Bones and turned their skeletons into dancing skeletons like in the book. I will add a photo.
Screenshots could easily be used for assessment or documentation. Say the students made a shape picture, they could screenshot the finished product. Then the teacher could assess it. This could work with something they type also.

Skitch can be used in so many ways! We used it to add position words to pictures. I would like to take action pictures of the students and they can write the action word on it then make it into a book. We could take a picture of the school and groups and label. Labeling could be done on plant pictures, animals, habitats. Endless possibilities. The more we use it, I think the kids will have ideas too.
